The short answer
Eat Kashmir course by course, not only from a hotel buffet.
Most visitors meet Kashmiri food as a hotel buffet. A food trip goes further: a Wazwan meal cooked by a waza, Kashmir’s traditional cooks for feasts; breakfast of noon chai and fresh bread from a local bakery; a cooking session in a home kitchen; the saffron fields at Pampore when they flower; and the bakeries and spice shops of the old city. Vegetarians are not left out: Kashmiri Pandit cooking has a strong vegetarian side, from dum aloo to nadru, lotus stem, in yoghurt.

What you eat
| Dish or drink | What it is | When and where |
|---|---|---|
| Wazwan | A many-course feast cooked by a waza and shared from one large copper plate, the trami, by four people: rista, rogan josh, tabak maaz, and gushtaba to finish. | Weddings and feasts; a smaller Wazwan meal can be arranged for a group. |
| Noon chai and bread | Salted pink tea with girda or lavasa from the kandur, the neighbourhood baker. | Mornings, in every neighbourhood. |
| Kahwa | Green tea with saffron, cardamom, cinnamon and almonds. | Any time of day. |
| Harissa | Mutton and rice slow-cooked overnight, eaten for breakfast. | Winter, in the old city of Srinagar. |
| Kashmiri Pandit dishes | Dum aloo, nadru yakhni (lotus stem in yoghurt), haak greens, chaman (paneer). | Best in a home kitchen. |
| Saffron | Grown on the plateaus around Pampore, about 15 km from Srinagar. | The fields flower for a few weeks from late October. |
What a food trip can include
- A Wazwan meal for your group, cooked by a waza.
- An early morning at a kandur’s oven, with noon chai and bread straight from the tandoor.
- A cooking session in a Kashmiri home, vegetarian on request.
- The saffron fields at Pampore in season, and how to tell real saffron: see Kashmir in autumn.
- A walk through the old city’s bakeries, spice shops and dried-fruit stalls.
- The vegetable sellers on Dal Lake at first light, by shikara.
We confirm the waza, the host family and timings for your dates before you travel.
Food by season
| Season | What to look for |
|---|---|
| Spring (March–April) | Almond blossom at Badamwari in Srinagar, and the first greens. |
| Summer (May–August) | Cherries and other fruit in the markets, long evenings for a lakeside meal. |
| Autumn (September–November) | The apple harvest, walnuts, and saffron flowering at Pampore from late October. |
| Winter (December–February) | Harissa for breakfast, noon chai by the stove, and dishes made with dried vegetables. |
Before you go
- Wazwan is a meat feast, mostly mutton. Tell us about vegetarians, allergies and any food you avoid, and we plan around them.
- During Ramadan many restaurants change their hours and some close in the day; harissa shops and bakeries keep their own timings. We plan meals around them.
- Kashmiri food is rich rather than hot. Ask for a lighter meal the day after a Wazwan.
When this trip is not for you
If you are strictly vegetarian and want a full Wazwan, know that it is built on meat: a Kashmiri Pandit vegetarian meal in a home kitchen is the better choice. And if fine dining is the point, look elsewhere: the best food here is cooked at feasts, in bakeries and at home.

Questions
What people ask us.
What is Wazwan?
Kashmir’s feast: a long sequence of mostly mutton dishes cooked by a waza and shared from one copper plate by four people, ending with gushtaba. It is cooked for weddings and celebrations, and a smaller Wazwan meal can be arranged for travellers.
Can vegetarians enjoy a food trip in Kashmir?
Yes. Kashmiri Pandit cooking has many vegetarian dishes, such as dum aloo, nadru yakhni, haak and chaman, and kahwa, bread and noon chai are vegetarian. Tell us and we plan every meal around it.
When can I see the saffron fields?
The fields at Pampore flower for a few weeks from late October into early November.
Can we cook with a Kashmiri family?
On request. We arrange a cooking session with a host family and confirm it for your dates before you travel.
